Este incremento indicaría un buen año en los despachos de este recurso hidrobiológico al tratarse de la cifra más alta del último lustro (periodo enero-febrero). En el 2018 ascendió a US$ 852 mil 930, en el 2019 US$ 471 mil 592, en el 2020 US$ 352 mil y en el 2021 US$ 376 mil 505.

Según datos del Sistema de Inteligencia comercial ADEX Data Trade, en los dos primeros meses del año se enviaron 35 mil 016 toneladas de bacalao de profundidad, 69.3% más en relación al mismo lapso del 2021 (20 mil 673).

EE.UU. fue el único destino de este producto en el periodo de tiempo analizado, a donde llegó vía aérea en la modalidad de fresco y refrigerado a través de los aeropuertos de Los Ángeles (US$ 409 mil 176), Miami (US$ 386 mil 787) y Orlando (US$ 263 mil 425).

CIFRAS ANUALES
En el 2021 los envíos de esta partida sumaron US$ 2 millones 600 mil, mostrando un incremento de 108.6% respecto al 2020 (US$ 1 millón 246 mil) y de 8.7% en comparación al 2019 (US$ 2 millones 393 mil), cuando la pandemia por el Covid-19 afectó las actividades productivas y la economía global.

Si bien el año pasado presentó el monto más importante de los últimos 4 años, aún se encuentra lejos de su máximo histórico del 2017 cuando se comercializó en los mercados foráneos por US$ 4 millones 441 mil.

DATOS
El bacalao de profundidad (Dissostichus eleginoides) es un pez de carne blanca que tiene una demanda importante porque se obtienen filetes grandes y gruesos. En Chile es conocido como mero y en Argentina como merluza negra.

La utilización de esta especie hidrobiológica en la cocina peruana se debe a la influencia española en nuestro país. El primer antecedente culinario del bacalao en el Perú data de un recetario del año 1876.
