Gastronomía peruana se consolida con elección de Restaurante Central como el segundo mejor del mundo, destacó Roberto Sánchez, ministro de MINCETUR.

“La cocina peruana posee una variedad única en el mundo. En los diversos rincones del país podemos encontrar propuestas increíbles, que permiten vivir una experiencia inigualable en sabores. Este reconocimiento al Restaurante Central muestra claramente el valor de nuestra gastronomía. Un gran saludo también a los reconocidos chefs Virgilio Martínez y Pía León”, afirmó el titular del Mincetur.

Como se recuerda, la ceremonia de premiación que reunió a los mejores cocineros del mundo, se celebró en Old Billingsgate, en Londres, donde se reunieron a los cocineros más influyentes del planeta para dar a la conocer la lista de los nuevos líderes de la gastronomía mundial.

Central no solo ha sido elegido como el segundo mejor restaurante del mundo; es también el mejor de todo el continente americano. Además, forma parte de los tres establecimientos nacionales en esta nómina, junto a Maido que ocupa el puesto 11, y Mayta ubicado en la casilla 32.

La organización de los World’s 50 Best Restaurants 2022 describió de esta manera la experiencia del reconocido restaurante Central: “Si bien el menú representa lo mejor de los ecosistemas peruanos, el equipo de Central se enfoca fuertemente en la sustentabilidad. El reciclaje, el compostaje y el cierre del ciclo de los ingredientes de desecho son algo natural. A los invitados se les da una idea de este diverso mundo culinario con solo caminar hasta la puerta principal, llevándolos a través de un huerto con más de 100 especies de plantas”.

Es preciso recordar que los World’s 50 Best Restaurants son considerados los premios Oscars de la gastronomía mundial. La primera edición ocurrió en el año 2022 y tuvo como ganador al restaurante español El Bulli, cinco veces elegido como el mejor del planeta.

Sin embargo, desde el año 2019, tras la implementación de la clasificación especial “Best of the best” por parte de la organización, ningún restaurante que haya obtenido el primer lugar puede volver a repetir el puesto.

En la edición 2021, Central ocupó el cuarto lugar de la lista. Dentro del top 10 estuvo también estuvo el restaurante Maido, especializado en comida nikkei.
