EsSalud presenta rico, nutritivo y saludables opciones de buffet para celebrar fiestas patrias este 28 y 29 de julio junto a toda la familia.

Según la licenciada Elizabeth Córdova, nutricionista del Hospital Guillermo Almenara de EsSalud, este buffet regional incluye superalimentos que contienen nutrientes en mayor cantidad que otros. Estos aportan mayores beneficios a la salud consumiéndolos en menores porciones, evitando así los excesos en estas celebraciones.

La especialista precisó que la obesidad y el sobrepeso están relacionados con los malos hábitos alimenticios y una vida sedentaria que desencadena en enfermedades coronarias, diabetes, hipertensión, además de aumentar la probabilidad de tener cáncer. Estos superalimentos permiten aprovechar la enorme riqueza y biodiversidad del país, generando mayores ingresos y sostenibilidad económica.

REGIÓN COSTA
La nutricionista de EsSalud explicó que esta región posee una gran variedad de pescados, entre los que destaca la anchoveta, un superalimento que se encuentra en la corriente de Humboldt. Con este pequeño pez se puede preparar una suculenta causa con vegetales que aportará, por cada 100 gramos consumidos, proteínas, aminoácidos esenciales, potasio, hierro, fósforo y calcio.

Otro superalimento es la palta, una fruta rica en fibra y grasas saludables. Gracias a su alto valor en ácido oleico tiene muchos beneficios para el sistema cardiovascular, pues disminuye los niveles de colesterol plasmático. En este caso se puede preparar una ensalada de palta acompañada de zapallito italiano, tomate y frejol. Esta porción aportará al organismo suficientes grasas saludables, vitaminas y minerales.

La sangrecita es otro superalimento de esta región por su importante aporte de hierro, el cual mejora los niveles de hemoglobina. En este caso se puede servir junto a unos tamalitos verdes y sarsa criolla. Este platillo puede ir acompañado de chicha morada, bebida bandera que contiene antioxidantes que ayudan a prevenir el daño celular y enfermedades degenerativas como el cáncer.

REGIÓN SIERRA
La quinua, cereal andino que contiene hasta 50% más proteínas que otros granos, contribuye al aumento de la masa corporal y a mantener un peso saludable. Con este superalimento se puede preparar una ensalada con zanahoria, habas, queso y tomate, que aportarán los aminoácidos esenciales, fibras, vitaminas y minerales que necesita el cuerpo. Todo ello ayudará a reducir el colesterol y la inflamación asociada con la obesidad.

El tarwi o chocho es una leguminosa similar a la soya que contiene un aminoácido llamado lisina, el cual está relacionado a la absorción de calcio. Con este insumo andino se prepara una ensalada que incluye tomate, cebolla, limón y perejil y puede acompañar al cuy chactado, una preparación que aporta proteínas y es bajo en grasas.

El tarwi tiene un alto contenido de triptófano, un aminoácido esencial que ayuda al buen funcionamiento de la hormona cerebral, genera sensación de bienestar y ayuda a regular el ciclo de sueño.

Otro superalimento de esta región es el capulí o aguaymanto, poderoso antioxidante que retarda el envejecimiento y mejora el sistema inmunológico. Aporta al organismo un alto contenido de vitaminas A, B y C, mejorando así los procesos asmáticos o sinusitis. Con este fruto andino se prepara el refresco de capulí de delicioso sabor que puede acompañar a diversas preparaciones.

El chuño arrebozado con hígado frito también es una opción saludable de la región Apurímac. El hígado, por su aporte en hierro, ayuda a contrarrestar la anemia y la vitamina B12 y a mantener un sistema nervioso saludable.

REGIÓN SELVA
En esta región, la especialista destaca la variedad de frutos, entre ellos el camu camu, quito quito o naranjilla, la cocona y el aguaje. Estos superalimentos no solo aportan vitaminas y minerales, también contienen fitonutrientes que harán que el sistema inmunológico se encuentre en mejor estado. Estos frutos pueden acompañar los platos típicos como refrescos.

Según la licenciada Córdova, esta región ofrece una gran variedad de pescados provenientes de los ríos que incrementan la riqueza gastronómica de la Amazonía peruana, entre ellos la trucha, doncella, paco, carachama y el paiche. Con estos pescados se pueden realizar creativos potajes como el ceviche de camu camu, una opción diferente y fácil de preparar, que por la fusión del pescado y esta fruta es rica en proteínas, omega 3 y vitamina C.

Los minitacachos con cecina son una alternativa para seguir consumiendo lo tradicional de esta región en porciones adecuadas que no sobrepase el contenido de grasas saturadas.

Es importante considerar una adecuada distribución de alimentos en el plato de comida, cuyo tamaño promedio debe ser de 23 centímetros de diámetro y estar dividido en tres partes: medio plato destinado a los vegetales por su aporte de fibra, una cuarta parte a los carbohidratos como tubérculos, cereales o leguminosas, y la otra cuarta parte para las proteínas como el pescado, pollo, gallina, res y otras carnes. No olvidar el acompañamiento con una fuente de grasa saludable, como palta, aceitunas o aceite de olivo.

Con la presentación de estas preparaciones, EsSalud tiene como objetivo incentivar el consumo de alimentos y bebidas saludables y a la vez conocer y degustar los platos típicos de cada región del país.
